After pining this recipe on my Pinterest I couldn't hardly wait to try it out myself. I've been on the search lately for new recipes to try that don't require hours of prep time. Especially after work and the gym I don't always want to be in the kitchen forever in the evenings. This was a delicious and quick meal that I threw together on a weeknight.
Roasted Red Pepper, Mozzarella and Basil Stuffed Chicken
1 bunch of fresh basil, whole leaves

I served ours with garlic mashed potatoes and sautéed lemon peppered asparagus. Kyle and I both really liked it! It was flavorful, mostly healthy and did not require hours of prep work and time in the kitchen. I did modify the recipe as I went since I was just cooking for us two. I basically just cut everything in half. This is one I highly recommend you trying. Enjoy!
