Weekending: Some of my Favorite Memories!

Man, yesterday was definitely a Monday and despite all my intentions on getting the weekend post up it just wasn't happening. So here I am for a late recap but it was such a good one that I didn't want to not get it posted. I love looking back here on my little space of mine and cherishing the memories so a late post it is!

On Saturday we celebrated my sister in law Randi for graduating with her MBA! It was such a fun time spending part of the day with friends and family celebrating. I am so proud of you Randi!

That evening I made it back home in time to bake a couple of strawberry pies for Mother's Day. I had never made a strawberry pie but I was so happy with how they turned out! I used this recipe but made my own crust and used the strawberries we handpicked from the strawberry field.

On the morning of Mother's Day two of my nieces and one of my nephews were dedicated at church.  It was such a special moment, love these babies!

All of us with my Mother In Law after the church service.

That afternoon we celebrated my mother in law with a cookout. It was such a beautiful day so the guys grilled burgers and we all ate and played outside for the rest of the afternoon. My nephews had the time of their life playing with Haddock in the creek and my niece Presley couldn't give Haddock enough kisses!

Happy Mother's Day to me from my fur baby Haddock! hehe

That evening we celebrated my mom and my sister with dinner. It was such a fun time because my mom is a HUGE Paul McCartney fan and I had secretly won her tickets a few days before for his concert this summer. She was so happy and surprised, it was so perfect!

It was a great weekend with a ton of memories made with friends and family! My mom, mother in law and sister deserve to be celebrated everyday because they are such wonderful moms! I love you guys, I'm so glad each of one you holds such a special place in my heart and life!

I hope y'all are having a wonderful week!

23 Things You Might Not Know About Me

I was trying to think of something fun and lighthearted to share here on my little space when I ran across a post from Olivia about herself. I thought it would be fun to share a little about myself as well! I hope you learn a thing or two about me.

I wish I knew how to ______.
Worry less, I tend to way overthink. Oh, and cook meatloaf without it coming out dry.

Quote to live by?
“Great people do things before they’re ready. They do things before they know they can do it.” Amy Poehler

Night owl or early bird?
These days, neither. Eleven o'clock hits and if I'm not in bed I'm DYING but at the same time any time before say seven-thirty AM is so early!

Favorite Instagram accounts to follow?
@rachaelsgoodeats, @thespoiledhome, @puffinandbennie, @joannagaines, @mrs_laurenmcmullen, @dreamywhiteslifestyle, @styleyoursenses, @proverbs31ministries, @thestylebungalow.

Drink of choice?
Iced tea or a glass of white wine.

Favorite dinner spot in Oklahoma?
I don't really have a favorite restaurant at all. I'm a foodie so I love to try  new places rather than going to the same places over and over. My favorites are the little local spots all across the state!

A valuable lesson you’ve learned?
Do not ever let someone disrespect you and steal your happiness away!

Last thing you splurged on?
A new bag while on a girls trip to Dallas.

What do you have your eye on?
I have a long weekend trip to the beach with the girls next month so I've got my eye on this bikini.

Apps you use every day?
My Fitness Pal for calorie tracking and VSCO for picture editing.

Favorite holiday?
There’s nothing more magical than Christmas morning.

#1 vacation destination on your list?
Fiji or Italy

Favorite way to spend a day off?
Wake up and take a nice long walk/jog with Haddock or a workout at the gym. Followed by lunch with friends on a patio and a pedicure or massage (or both!). Some shopping at Utica Square ending with a blo out and capping the day off with a date night.

Best relationship advice?
Always follow your heart. When you know, you know.

Favorite dessert?
A simple scoop of Braum's chocolate ice cream OR Blue Bell's Red, White & Blue Bell ice cream. I'm an ice cream girl fo' sho!

Best advice when it comes to dealing with people?
Give everyone you meet the benefit of the doubt. Don’t assume, don’t jump to conclusions. Every person you meet is dealing with things you have no idea about.

Favorite Starbuck’s drink?
I'm not a coffee drinker so a grande non-fat hot chocolate with whip. If you have a fave Starbucks non-coffee cold drink shoot it my way! I recently tried, by recommendation, a chilled green tea latte. So gross.

What would you tell your 18 year old self?
Take the risk it’s worth it, be more confident in yourself, and start thinking about what you want to do after college the second you begin your freshman year. Oh, and make your plan be to get your masters the second you graduate with your undergrad.

What do you miss?
The simplicity of life. Ya know when the biggest worry in life was if I was going to get to go to Grandma and Grandpa's for a weekend sleepover or not! I wish I could go back to simple times.

Dream job?
Marketing for the Today Show but I'm not sure I would want to live in NYC so being a full-time blogger would be pretty amazing!

Nike or Adidas?
Nike

Coolest celebrity moment?
That one time me and my best friend were practically on stage with Luke Bryan and he grabbed her phone and took a selfie with it. We about died!

Weird thing about me:
I love the smell of skunks.

Strawberry Pickin'

Yesterday I mentioned that we went strawberry pickin' this past weekend. I've always enjoyed picking my own fruit but enjoy eating fresh local produce even more! It seems like every year I miss strawberry season and this year I was on top of it! We've had a ton of rain this spring in Oklahoma so some of the local gardens were rained out but most of them have an abundant amount of berries. We picked at Gibson Gardens if you are local and interested in picking your own.

I've given some berries away, we've had strawberries in some form with every meal in this week and I've got homemade jam on my mind and strawberry pies for Mother's Day to make. I know that some will be frozen for smoothies and protein shakes but that still leaves a lot of berries left! Anyone have a delicious strawberry recipe for me to try?

Weekending Outside!

This weekend we had the most gorgeous weather here in Oklahoma and we took full advantage of it! We kicked off the weekend by celebrating Cinco De Mayo with delicious mexican food and a couple margaritas followed by another couple of drinks on the patio when we got home. It was the perfect start to the weekend.

Saturday we had full day of fun! We started off the day with picking strawberries at a local garden, it was a nice way to slow down and just relax even though it was kind of a lot of work! I'll share more on the picking tomorrow. Afterwards we headed to a local rose festival which I snagged a few bags of local veggies, ah I love this time of year - fresh eats! Then we continued on to the another local food truck festival. We had a little Cajun and Greek and then headed on out of town to the lake. Kyle went fishing on Sunday so he wanted to see how the lake was since we just had a ton of rain here. A quick walk around the lake with Haddock and we were back on the road headed home to watch the Derby! We watched the race at a local pub on their patio and then headed on to our next few stops to run errands and ended the night with dinner on a patio again. The weather was too perfect not to spend the whole day outside!

Sunday I cleaned the house and got ready for the week while Kyle went fishing. We finished off the day with church and then dinner once again out on a patio. It was a great weekend and one that made this morning extra hard! Image Map

Kentucky Derby Pie

One of the things that is towards the very top of my bucket list is to go to the Kentucky Derby. I've been dreaming since I was young of putting on a beautiful dress with a huge fun hat while sipping on a mint julep and cheering my favorite horse to the finish line! Since this isn't the year for me to fulfill that dream I just decided to make a yummy dessert in honor of the big race tomorrow instead.

I spotted a recipe for this Kentucky Derby pie and thought well it's gotta be good enough for the triple crown of desserts because it is almost like a southern pecan pie but with chocolate chips! A must try in my eyes and this pie did not scratch in the dessert derby, so delicious!

Kentucky Derby Pie

Ingredients
1/2 cup butter, melted
1 cup sugar
2 eggs
1 tsp vanilla
1/2 cup flour
1 cup chopped pecans
1 cup chocolate chips
1 frozen pie crust

Directions
1. Mix butter and sugar. Add eggs and vanilla and mix well.
2. Add salt and flour, mix well.
3. Fold in pecans and chocolate chips.
4. Pour mixture into pie crust and bake at 325 degrees for one hour.
5.Let cool for one to two hours before serving.
6. Enjoy!

Will you be watching the race? Who is your pick? I think if I was at the Derby all money would be on Class Empire! But I do love Gunnevera and Always Dreaming. I hope y'all have a great weekend with your biggest decision being a margarita or mint julep!
