Staying Under the 1,200 Mark

Today marks day eighteen of counting every calorie that goes into my mouth. A few weeks ago I realized my beach trip wasn't far away and I needed to pull it together so I started counting calories and hitting the gym extra hard. In early 2010 I began a lifestyle change and started making working out a non-negotiable part of my world and I also started using My Fitness Pal and logging all my calories I ate. I lost seventeen pounds so I knew this dieting method worked for me. So now anytime I want to cut a little weight and buckle down I start the count again. Here is what a typical day looks like for me right now...

Breakfast: Gluten free Instant Oatmeal with Flax
Calories: 180


I love starting my day off with oatmeal because it keeps me full for quite some time, gives me energy and is a quick on the go meal. I can throw this in the microwave while I'm packing up my lunch and its ready for me to grab and go on my drive to work.

Mid-Morning Snack: Plain Whole Almonds
Calories: 80 (15 almonds}


I don't always have a mid-morning snack but if I need a pick me up and something to pull me through until lunch I typically grab a few raw unsalted almonds. Almonds are high in calories but are considered "good fat" and are a fat burner.

Lunch: Half Grapefruit and Tuna Lettuce Wraps
Calories: 210 (Total)


I love this easy work lunch! I mix one can of regular tuna with half a tablespoon olive oil mayo, chopped dill pickles and a tad bit of pickle juice and black pepper. I wrap a spoonful up in a leaf of bib lettuce and have tuna lettuce wraps! Pair it with the grapefruit and I have a tasty low cal and protein packed lunch, score!

Afternoon Snack: Protein Bar
Calories: 210-245


I'm the kind of woman that will not make through a hard workout without something to power me through. My go to protein bar is the Zone Perfect- chocolate peanut butter. It doesn't have that nasty protein powder taste and fills me up giving me plenty of energy to hit the weights. It took me a bit to get over the whole 210 calories, lets be honest that's a lot when you only have 1,200! But with 14 grams of protein I know its a must! Everyone once in awhile I'll pair some fresh fruit with it.

Dinner: Sautéed Vegetables and Turkey Sausage
Calories: 310


I love this healthy and tasty dinner idea! I got the idea from an Instagram fitness post and I've made it several times since. I just cut up Brussels sprouts, broccoli and a sweet potato. Sautee all your veggies with a tad bit of EVOO and black pepper. Add in cut up smoked turkey sausage and heat through. So good and again low calorie!

Evening snack: Fresh fruit or Angie's Sea Salt Popcorn
Calories 30-70 Calories


If I am craving something and need a snack after dinner I fix fresh cut up fruit or I am absolutely LOVING Angie's Boom Chicka Pop popcorn! The lightly caramel kettled is my favorite (70 calories for one cup) and if I cant have it then I love the sea salt kind as well and only 30 calories for a cup. Perfect snack! I realize this is not the healthiest snack choice but its not terrible and just not every night...if I could remember that!

All of that totals to 1,095 calories, coming in 105 below my goal mark! Then I try to burn between 400-530 calories in cardio alone. I just ordered the Polar FT7 so I will finally be able to also know how many calories my weight lifting burns. But for now minus my cardio calories burned I net on average 580 cals for the day. If I stay on track and most of my days look like this I will lose 2-3 lbs a week. Now, if I could lose just a couple more by the end of the week. Praying to the Victoria Secret Angel body Gods for a miracle!

Please know, this is just works for me! Everyone is different so I realize not everyone will benefit from my daily routine but it might motivate just one person that needs that extra push! Go after your goals, you can do it...we can do it, together!

Spicy Lettuce Wraps

Since I have a little less than three weeks before I leave for Mexico I am in total crunch mode. This means I've been hitting the gym hard, counting every calorie and eating clean.  Which also means Kyle is not usually a fan of dinner lately. It is SO much harder to count calories, eat clean and lose weight when you're married! When I was single I'd hit the gym and then grab an apple and peanut butter for dinner, Kyle won't go for that. A couple nights ago I made roasted sweet potatoes and he said "I don't know why I have to suffer and eat big carrots because you want to wear a bikini." Welp, I wasn't sure how he'd feel about these spicy turkey lettuce wraps and he gave it one try. He had one wrap, that's how well that went. I've made these wraps several times before but always when I'm flying solo for dinner. They're tasty, easy to throw together and only 76 calories per wrap! Sign me up!

 
Spicy Lettuce Wraps 
Recipe by: Pillsbury

Prep time: 30 minutes
Total time: 30 minutes
Serving: 15
Ingredients
1 cup Fiber One original bran cereal (I leave this out- with the wraps are 96 cal each)
2 tablespoons soy sauce plus water to make 1/2 cup (I use low sodium soy sauce)
1 package (20 oz) lean ground turkey
1 1/2 cups julienne carrots
1 large onion, chopped (1 cup)
1/3 cup Thai peanut sauce
2 tablespoons lime juice
2 to 4 tablespoons chopped fresh cilantro
15 leaves Bibb or iceberg lettuce (I use Bibb for more nutrients)


 
Directions

1. (If using cereal) Place cereal in resealable food-storage plastic bag; seal bag and finely crush with rolling pin or meat mallet (or finely crush in food processor). In large bowl, mix crushed cereal and soy sauce-water mixture. Let stand five minutes. 

2. Thoroughly mix turkey into cereal mixture. Spray 10-inch skillet with cooking spray; heat over medium-high heat. Add turkey mixture, carrots and onion. (Since I don't use cereal I put my soy-sauce mixture in along with these and cook); cook 5 to 7 minutes, stirring frequently, until turkey is no longer pink.

3. In small bowl, mix peanut sauce and lime juice until blended. Stir into turkey mixture. Reduce heat to low. Cover; cook 5 to 7 minutes, stirring occasionally, until carrots are crisp-tender and flavors are blended. Stir in cilantro. 

4. To serve, spoon about 1/3 cup turkey mixture into each lettuce leaf. 

Enjoy! This also makes great leftovers and super easy to take for work lunches.

What I've Been Cookin Lately

Lately I have tried several new recipes that have all turned out to be pretty successful. Good for my soul to be in the kitchen and maybe a little too good on our stomachs!
 
We have a local Oriental food market that I had heard has great supplies to make homemade egg rolls, wontons and such. Well, several months ago I talked a friend into going with me on this little adventure. The market was located in a hole in the wall of a shopping center, ducks were hanging above her our heads as we walked in and the place reeked of some very unpleasant smells. It was so bad that as we walked in we both gasped for air and covered our mouths. Realizing how rude that was but it was a first reaction. And a must. We quickly picked up supplies for egg rolls and a few other items that we knew would be safe without guessing. After making my rolls I knew I needed to go back but how would I bare that again? A co-worker then let me know that the market had moved and was supposed to be much nicer...no ducks and no God awful smells. So, a couple weeks ago my co-worker Amy and I headed to Nam Hai after work. It was MUCH better and certainly bearable.
 
  
We shopped through the aisles trying to figure out what were some items were as I repeatedly  suggested to Amy to not pick up jars of fish with eyeballs peaking through the glass or unknown produce items! I still didn't make it to the "fresh" fish butcher area, eek but I picked up some supplies and we headed out. A much better experience this time, thanks Amy for talking me into that trip! 
 
So, first up - what ended up being a like a ten course Chinese meal for just Kyle and I but it was so worth it!
 
 
I purchased wonton wrappers and egg roll wraps from Nam Hai. I used this recipe for the pork egg rolls and this recipe for the cream cheese wontons. Kyle and I both loved the wontons and will definitely be a repeat in our kitchen. The fried rice was edible but I have given up on making homemade fried rice I think. I used a spice mix I bought at the market and mixed it with the peas, green onions, eggs and steamed rice. We ate it but I will not be making that mix again. Next, baked sweet and sour chicken, big success! I got the recipe from Megan's post at Tales of the Trees. We loved the chicken and it was so simple to make! So much healthier than takeout and tasty! Kyle is already asking me to make this one again! Sorry, for the terrible picture. After hours in the kitchen I was wiped out and this was the only pic I could manage to take.
  
Baked Sweet and Sour Chicken
 
Prep Time 20 minutes
Cook Time 1 hour
Total Time 1 hour, 20 minutes
Yield 4 servings
 
 
Ingredients
1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
Kosher salt and freshly ground black pepper, to taste
1/2 cup cornstarch
2 large eggs, beaten
1/4 cup vegetable oil
Sweet and Sour Sauce:
3/4 cup sugar
1/2 cup apple cider vinegar
1/4 cup ketchup
1 tablespoon soy sauce
1/2 teaspoon garlic powder
 
Instructions
Preheat oven to 325 degrees F. Lightly oil a 9x13 baking dish or coat with nonstick spray.
To make the sauce, whisk together sugar, vinegar, ketchup, soy sauce and garlic powder in a large bowl; set aside.
In a large bowl, season chicken with salt and pepper, to taste. Stir in cornstarch and gently toss to combine. Working one at a time, dip the chicken into the eggs.
Heat vegetable oil in a large saucepan. Add chicken and cook until golden brown, about 1-2 minutes. Transfer to a paper towel-lined plate; discard excess oil.
Add chicken to prepared baking dish. Top with sweet and sour sauce. Place into oven and bake until the sauce has thickened, about 55 minutes, turning over every 15 minutes to evenly coat the chicken.
Serve immediately.

Last week I whipped up some roasted potatoes and spinach to go with the steaks Kyle grilled and sauteed green beans. These were again so simple and tasty! This recipe came for the Chopped cookbook that my fellow foodie co-worker, Amy let me borrow.
 
 
 
Roasted Potatoes with Wilted Spinach
 
Ingredients
4 tbsp (1/2 stick) melted unsalted butter
2 minced garlic cloves
1 tbsp whole-grain mustard
1 pound red potatoes
5 ounces fresh spinach
Instructions
Whisk together melted butter, garlic cloves, whole-grain mustard. (I added fresh ground pepper also)
Toss with quartered cut red potatoes. (I used Idaho gold potatoes because that's what I had)
Roast at 400 degrees until the potatoes are lightly browned and tender, 20 to 25 minutes.
Top with 5 ounces of fresh spinach leaves. (I just topped with a large couple handfuls)
Return to the oven for 3 more minutes.
Toss to coat and season with kosher salt.
Serve warm
 
 
Almond crusted chicken up next: if you are looking for a very simple and healthy recipe to replace fried chicken or even flour coated baked chicken, try almonds... you won't regret it! I served ours with sauteed cabbage and a chopped green salad with green onions and boiled eggs. I used parmesan cheese and a artichoke parmesan dressing, shhh I didn't tell Kyle about the artichoke part, and he loved it!
 
  
Almond Crusted Chicken
 
Ingredients
1 cup raw unsalted almonds
1 chicken breast (I used one pound of chicken tenders)
Olive Oil


  • 1 cup of raw unsalted almonds

  • 1 chicken breast

  • 1 cup of raw unsalted almonds

    Instructions
    Preheat your oven to 400 degrees Fahrenheit
    Prepare your almonds into almond meal. All you need to do this is a food processor!
    Give it a whirl… about a minute later you have almond meal!
    Now place on a plate or bowl 
    Slice your chicken into tenders if not already using tenders.
    Brush each tender coating it with olive oil.
    Dip each one into the almond meal
    Place in the oven for 25 minutes or until brown on top

    We had a couple of tenders left over so I warmed them up and tossed them in a salad for my lunch at work the next day.
     
    Lastly Game Day, the appetizer I made for the Superbowl on Sunday. Kyle had been begging me to make this jalapeno popper dip ever since he had some at a friends a few weeks ago. So, I thought this would be the perfect appetizer for the game. And oh my word, this stuff is so yummy! Unlike, the last recipe this one isn't so easy on the figure but completely worth it, trust me!I cut the original recipe in half and it still made a 9x9 dish.
     
     

    Jalapeno Popper Dip
     
    Ingredients
    4 slices of bacon, diced and cooked crispy
    1 8-oz packages of cream cheese, soft
    1/2 cup of mayonnaise
    4 jalapeno's, chopped and deseeded.  The seeds will make it fiery hot.
    1/2 cup of cheddar cheese, shredded
    1/4 cup of mozzarella cheese, shredded

    Topping:
    1/2 cup of crushed crackers ( I used Ritz reduced fat)
    1/4 cup parmesan cheese
    1/4 stick of butter, melted
     


  • 1 cup of raw unsalted almonds

  • 1 chicken breast

    Instructions
    Preheat oven to 350.
    Combine all of the ingredients into a medium bowl.  Stir well.
    Transfer to an oven proof dish. The size of the dish depends on how thick the dip is. The thicker the dip the longer it may need to warm up. I used a 9x9 baking dish and my dip was about two inches thick but still cooked fine.
    Combine the topping ingredients and sprinkle all over the top of the dip.
    Bake the dip for 20-30 minutes or until bubbly.

    Don't just take my word for it, try it as your next appetizer! I served mine with chips but I also tried it on the crackers as well and it was great! 
    Tonight I'm testing out a new and very healthy dish...wish me luck getting it past Kyle! I plan on trying all new recipes next week so, do any of you have ones you've tried that you could share?
