After pining this recipe on my
Pinterest I couldn't hardly wait to try it out myself. I've been on the search lately for new recipes to try that don't require hours of prep time. Especially after work and the gym I don't always want to be in the kitchen forever in the evenings. This was a delicious and quick meal that I threw together on a weeknight.
Roasted Red Pepper, Mozzarella and Basil Stuffed Chicken
Ingredients
4 boneless skinless chicken breasts (or however many you'd like to serve)
8 ounces of fresh mozzarella, sliced into 8 slices
1 12 oz jar of roasted red peppers sliced into 1 inch pieces
1 bunch of fresh basil, whole leaves
1/4 cup fresh grated parmesan (I'm a big fan of using fresh parm rather than pre packed, yumm)
1 Tbs Italian seasoning
Black Pepper and salt for seasoning
Directions
Preheat oven to 400 degrees. Grease a 9x12 casserole dish. Butterfly chicken breasts by slicing into the long side of the breast and stopping just about 1/4 inch from the opposite side. With the chicken breast opened up sprinkle the exposed insides with half of the Italian seasoning and salt and pepper. Stack the roasted red pepper, basil and 1 slice of the mozzarella on the bottom side of the chicken. Fold the flap of chicken over, tucking in the mozzarella, basil and roasted peppers as necessary. Sprinkle with the remaining Italian seasoning. Bake chicken for 30-40 minutes (until chicken is no longer pink). Pull chicken out of oven and turn the oven to high broil. Top the chicken with remaining mozzarella slices and sprinkle with Parmesan cheese. Broil until cheese is browned and bubby, about 5 minutes.

I served ours with garlic mashed potatoes and sautéed lemon peppered asparagus. Kyle and I both really liked it! It was flavorful, mostly healthy and did not require hours of prep work and time in the kitchen. I did modify the recipe as I went since I was just cooking for us two. I basically just cut everything in half. This is one I highly recommend you trying. Enjoy!
